Pumpkin Cookies with Pecans and a Maple Syrup Glaze


  • 1 cup sugar
  • 2 sticks unsalted butter, softened
  • 2 tablespoons Maple syrup
  • 2 eggs, room temperature
  • 3/4 can of pumpkin puree (15 oz. can)
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground all spice
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon pumpkin pie spice
  • 2 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans

Maple Syrup Glaze

  • powdered sugar - about 3/4 cup
  • maple syrup
  • 1/2 teaspoon pumpkin pie spice


  1. With your mixer on the stir speed, combine butter and sugar until smooth.  Next, add the maple syrup and eggs.  Add the pumpkin.  In a separate bowl, combine the remaining dry ingredient except for the pecans.  Slowly add the dry ingredients to the pumpkin mixture.  Finally, ad in the pecans to combine.  Bake at 350 degrees for about 10 minutes.
Maple Syrup Glaze
  1. Mix everything together - adjust accordingly if it is too runny or too thick.  If you want it to be more of a frosting than a glaze (I just drizzled it on the cookies), add more powdered sugar.  Let the cookies cool before glazing.
